Made only in Valais from raw cow's milk. Alpine pastures, spruce-board maturation and a wonderfully expressive taste of place.
Crafted across Switzerland using different milk treatments. From beautifully mild to boldly aromatic, perfect for the little pan.
In Valais, the traditional way is wonderfully simple: warm a half-wheel by the fire, scrape the golden layer onto potatoes, and make room for another round. At home, a tabletop grill keeps that same spirit alive.

Work out how much cheese and potatoes to buy, then serve it the way it's done in Valais.

A tiny part of the world with a very big cheese story.
Raclette isn't really about dinner. It's about the person who asks for one more potato. The friend who makes the best little pan. The stories that get better with every round. Pull up a chair.

Yes. Raclette du Valais AOP has a protected Valais origin and uses raw cow’s milk. Raclette Suisse is made in several Swiss regions and can use raw, thermised or pasteurised milk. Both are delicious, and both melt beautifully.
Plan about 200–250 g of cheese and a similar amount of potatoes per person. Allow another 150–200 g per person for all other sides together. Scraping a wheel? Add around 300 g to the total cheese amount.
Not at all. Raclette Suisse says raclette suits winter, spring, summer and autumn, indoors or outdoors: at the table, on the balcony, when camping or in the garden.
Raclette Suisse states that the rind of its natural cheese is edible. For a particular wheel or flavoured variety, follow the producer’s instructions.
A Valais Fendant (Chasselas) is a traditional match. Water, tea or a drink you love work too. The best pairing is the one that keeps everyone at the table.
Not always. Raclette du Valais AOP uses animal rennet, and some other Swiss raclette cheeses do too. For a strictly vegetarian meal, look for cheese explicitly made with microbial rennet.
